Sprouting is in the process of growing. The sprouting of the basil plants on your kitchen windowsill will fill the room with the delicious scent of basil.

When a plant sends out new growth it sprouts, and as an noun, sprouting can be used for that process of growth itself. The sprouting of your tomato plants will result in delicious, ripe tomatoes, while the sprouting of your nieces and nephews means that they're a little taller every time you see them.
