Meat that looks reddish before being cooked is known as red meat. Chicken isn't red meat, but beef is.

The hamburgers you're about to cook on the grill are made from ground beef — a type of red meat. If you like your burgers on the rare side, they will still have some red inside even after they're cooked. Poultry is generally known as white meat, and pork is frequently categorized by both terms (it's pale, but nutritionally it resembles red meat). The USDA defines red meat as "all meats obtained from mammals."
