People who can eat dairy products like ice cream and cottage cheese with no problem have digestive systems that make plenty of lactase, an enzyme that breaks down the sugar called lactose. Being lactose intolerant means that your small intestine doesn't produce enough lactase; eating a bagel with cream cheese or drinking chocolate milk can give you a terrible stomach ache. Lactose has a Latin root, lac, or "milk."
